Greens from the Garden Frittata
6 slices of bacon
4 cups of spinach
2 cups of beet tops
6 green onions sliced white and green
1/2 cup of milk
1 cup of grated sharp cheddar cheese
1/8 tsp salt
1/8 tsp pepper
Preheat oven to 350°.
In an oven safe frying pan fry bacon until crispy, crumble and set aside on paper towels. Reserve 3 tbs of bacon grease in the pan add in spinach and beet tops 2 cups at a time cooking until it wilts down. Add green onions, cook several minutes until onions are tender.
In a bowl wisk together eggs, milk, salt, pepper and cheese. Pour mixture into pan with vegetables, add bacon, stir once to make sure all is combined. Cook on stove top 5 minutes or until egg starts to pull away from sides of pan. Continue to cook in oven 18 minutes until egg is set and slightly golden brown.
