Don't Drown in Summer Squash

Squash and Zucchini boats
2 summer squash
2 zucchini squash
1/2 stick of melted butter
1 cup grated Parmesian cheese
1 tsp granulated garlic
1/2 tsp salt
1/2 tsp pepper
Heat oven to 400°
Wash 4 squash and trim off ends. In a large pot par boil whole squash till soft to the touch about 4-5 minutes. Cut in half length wise, you should have 8 "boats". Place on a foil lined sheet pan sprayed with a non stick cooking spray, skin side down, . Add melted butter, salt, pepper and garlic. Sprinkle on cheese and bake until bubbly and golden brown.
