Still not drowning in summer squash?

Here is another amazing summer squash recipe from Palmetto Moon Catering!

Have a safe and happy 4th of July!!

Squash Casserole

4-5 medium squash cubed

I med onion diced

1/2 sleeve of saltine crackers crushed

1egg

1/2 stick of butter melted

1/4 cup evaporated milk

1&1/2 cups grated sharp cheddar cheese

1/2 tsp garlic powder

Dash of salt and pepper

Preheat oven to 350°

Boil squash and onions together until tender, drain and mash with a fork. Combine with all other ingredients except half of cheese, pour into an 8 X 8 casserole dish, cover top with remaining cheese. Bake for 45 minutes until bubbly and golden brown. Let stand for 15 minutes before serving.
